Why hello diet, you've never looked so good! These scones are delicious, healthy and the best part...only 160 calories! I baked them last night and went to bed looking forward to waking up to a hot cup of coffee and one of these. They are quiet simple to make, and take only a few minutes to prep and throw into the oven. I adapted the recipe slightly from my "400 Calorie Fix" book. Hope you enjoy!
Ingredients: (makes 8 servings)
1/2 c whole wheat pastry flour
1/2 c unbleached all purpose flour
1/2 c rolled oats
3T sugar
1t baking powder
1/4 t baking soda
1/2 t ground cinnamon
2T unsalted butter
1/4 c plain low-fat yogurt
1/4 t vanilla
1/4 dark chocolate chips (coarsely chopped)
Directions:
1) Preheat oven to 400 degrees
2) Mix together first 7 ingredients in a food processor
3) With the processor running, add small cubes of butter one at a time. Process until the mixture look crumbly. Add the yogurt, egg, and vanilla extract. Process until just well mixed. Add the chocolate chips. Process for about 10 seconds.
4) Place the dough on a lightly floured cutting board. Knead lightly to finish combining all the ingredients. Form into a ball, flatten into an 8" circle (1/2" thick) with your hands (or rolling pin) and cut into 8 wedges. Place on a greased cookie sheet and bake 12-15 minutes, until lightly browned.
